凯氏法是一种在催化剂存在下用硫酸分解蛋白质，测定含氮量从而计算粗蛋白质含量的标准分析化学方法。该方法通过消解、蒸馏和滴定来测定有机化合物中的氮含量，将有机氮转化为硫酸铵，再释放氨并滴定测定。改进的凯氏法可用于测定样品中有机氮和铵态氮含量，适用于土壤、水样等各类样品。
