酸价是中和1克油脂样品中的游离脂肪酸所需氢氧化钾的质量（毫克数），是衡量油脂品质和酸败程度的重要指标。测定时样品需溶于特定溶剂并以氢氧化钾滴定至特定终点，1克试样中游离脂肪酸所消耗氢氧化钾的毫克数即为其酸价值。
