组胺是一种生物活性低分子量碱性含氮分子，由微生物组氨酸脱羧酶通过组氨酸脱羧作用形成。它存在于某些腐败食品中，尤其是鱼类产品，是导致食物中毒的重要毒素之一，也是鲭鱼中毒或组胺鱼中毒的致病因子。其含量测定是评估水产品和部分发酵食品安全性的重要指标。
