甾醇是一类类固醇醇，广泛存在于动物和植物脂肪与油脂中。这些脂溶性化合物包括动物脂肪中的胆固醇和植物油中的β-谷甾醇、Δ7-avenasterol等。甾醇具有特定环戊烷多氢菲结构，在油脂中以游离或酯化形式存在，含羟基的环戊烷全氢菲类化合物是其基本特征。
