滴定酸度是中和一定量复原乳或水样所需氢氧化钠溶液的毫升数，定义如中和10克样品至pH 8.30±0.01所消耗的0.1 mol/L氢氧化钠体积。通常以每100克中的毫摩尔数表示，并在酚酞指示剂存在下滴定至粉红色。
