新鲜度指产品维持原有新鲜状态的程度，是衡量稻谷、水果、禽肉等商品质量的感官指标。通过规定实验条件测得新鲜度数值，数值越高表示样品越新鲜；水果因采后失水而萎蔫、色泽变化，禽肉在微观结构上具有最小结构变化和微生物发展状态。该概念影响产品的感官质量及商品级别。
