采收成熟度是判断瓜果达到适宜采收程度的标准，依据盛花期后天数、果实硬度及可溶性固形物含量等指标判定。指果实完成生长和化学物质积累过程，已到最佳贮运阶段但未达最佳食用阶段，此时呈现本品特有的色、香、味等主要特征，果肉开始由硬变脆。
