醛类是一类含有醛基（-CHO）的有机化合物，易分解且对健康有害。主要是不饱和α,β-醛类，存在于油或脂肪中，是p-茴香胺指数测量的对象。还用作香料和调味品的制备材料，是伏特加酒中的一种杂质成分。
