成熟是指在特定时间内发生的一系列生物化学和物理化学过程，使鱼类、海鲜罐头、水果或腌制食品的质地、味道和气味得到改善。对于水果，指果实充分发育，糖度最低8.5Brix，糖酸比至少10。对于畜类，指骨骼、肌肉和器官发育完成并具备繁殖能力的状态。
