凯氏氮是指在硫酸和/或硫酸钾存在下，以硫酸汞为催化剂将有机物中的氨基氮转化为硫酸氢铵的方法所测定的氮。它包括游离氨、无机铵化合物以及在该标准所述的催化硫酸消解条件下转化为硫酸铵的有机氮化合物所提供的氮。凯氏氮通常用于测定水样中游离氨、铵盐和有机物中胺的总含氮量，通过消解、蒸馏和滴定的过程获得。
