Термическая обработка — это общее название процессов тепловой обработки пищевых продуктов и материалов, включающее кратковременное нагревание овощей и круп перед замораживанием (бланширование), пастеризацию и стерилизацию молочных продуктов, а также нагрев металлов до определённой температуры с последующим охлаждением для изменения их свойств и структуры.
