酯值是中和1克精油中酯类水解后释放的酸所需氢氧化钾的毫克数。也是中和1克香料所含的酯在水解后释放出的酸所需的氢氧化钾毫克数，以及中和1克样品中游离酸和酯水解后产生的酸所需的氢氧化钾毫克数，用于表征醇的含量。
